How its Made
Step 1)
We grow garlic in our super soil in one of our raised vegetable beds.
Step 2)
We collect bananas from our farm and ferment them into banana vinegar.
Step 3)
We hand pick the chilies from the wild ‘chilie congo’ bushes growing on our farm.
Step 4)
We combine the three ingredients along with salt* using a local recipe to produce about 2 gallons of hot sauce. We use the hot sauce throughout the year and sell the extra in bottles to guests and through this website.
How to use
The hot sauce is ‘hot’. Not insanely hot, but hot. We find it is best to add the sauce food that you can mix it into. It gives has a great flavor and just enough of a kick to let you know it was grown in the jungle of Nicaragua.
Ingredients
vinegar (fermented from our farm bananas)
wild chilie congos (ripe, hand picked from bushes on our farm)
garlic (grown onsite)
salt.
* Salt is the only ingredient not produced onsite. We buy organic salt from Whole Foods in the US and bring it to our kitchen at the farm.
